Our Easy Salsa Chicken is packed with flavor and made with just a few simple pantry staples. Add chicken, your favorite salsa, taco seasoning, beans, and corn, then let it cook until tender and ready to shred! Servings: 6 Prep Time: 10 minutes Cook Time: 4–6 hours (Low) or 2–3 hours (High) Ingredients 4 boneless, skinless chicken breasts or thighs 1 (16 oz) jar salsa 1 packet taco seasoning 1 cup chicken broth 1 (15 oz) can black beans, drained and rinsed 1 can corn 2 cups cooked white or brown rice Juice of 1 lime Fresh cilantro, chopped (optional) Toppings Shredded cheddar or Mexican blend cheese Sour cream or plain Greek yogurt Diced avocado Green onions Fresh pico de gallo Tortilla strips Jalapeños Instructions: Place the chicken in the slow cooker. Sprinkle with taco seasoning. Pour in the salsa and chicken broth. Cook on: Low: 4–6 hours High: 2–3 hours Shred the chicken with two forks. Stir in the black beans and corn. Cook another 15–20 minutes until heated through. Add the lime juice and stir. To Serve: Spoon cooked rice into bowls. Top with the salsa chicken mixture and finish with your favorite toppings.
