Ingredients
For the apple filling:

For the gingersnap topping:
- 1 ½ cups crushed gingersnap cookies (about 20 cookies)
- ¾ cup old-fashioned oats
- ½ cup brown sugar
- ½ cup all-purpose flour
- ½ teaspoon ground ginger (optional for extra spice)
- ½ cup cold butter, cut into small cubes
Directions
- Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
- Prepare the filling: In a large bowl, toss the sliced apples with both sugars, lemon juice, cinnamon, nutmeg, vanilla, and flour. Stir until evenly coated. Pour mixture into the prepared dish.
- Make the topping: In a separate bowl, combine crushed gingersnaps, oats, brown sugar, flour, and ginger. Cut in the butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
